Celebrity Chef Sanjeev Kapoor has shared a quick and comforting one-pot pasta recipe designed for busy weeknights when time and energy are in short supply. The chef posted the recipe in an Instagram video on Sunday, promising a meal that delivers on flavour while keeping washing up to a minimum.

Ingredients
The recipe calls for the following ingredient:
- 1½ cups of penne pasta
- 1 tablespoon of olive oil
- 1 small chopped onion
- 1 tablespoon of chopped garlic
- 4 to 5 quartered button mushrooms
- 1 small yellow zucchini, cut into triangles
- 1 cup of tomato purée
- Salt to taste
- ½ teaspoon of dried mixed herbs
- 1 teaspoon of sugar
- 1 medium green capsicum, seeded and cut into triangles
- 4 halved cherry tomatoes
- 2 tablespoons of butter
- A fresh basil sprig for garnish.
Method
- Start by heating the olive oil in a large pan over medium heat.
- Add the chopped onion and garlic and sauté for two to three minutes until the onion turns soft and translucent.
- Add the mushrooms and zucchini to the pan, stirring well and cooking for a few minutes until the vegetables begin to soften and release their moisture.
- Pour in the tomato purée, then add the salt, dried mixed herbs, and penne pasta, mixing thoroughly so the pasta is evenly coated with the sauce and seasonings.
- Stir in the sugar and 2 cups of hot water, combining well.
- Cover the pan with a lid and cook over medium heat for 10 to 12 minutes, or until the pasta is tender and has absorbed most of the liquid.
- Once cooked, add the green capsicum, cherry tomatoes, and butter, tossing gently until the vegetables soften slightly and the butter melts into the sauce.
- Transfer the pasta to a serving plate or bowl, garnish with a fresh basil sprig, and serve hot.
