Jelly is a favourite ingredient for people of all ages, but the high sugar content typically prevents it from being a healthy food option.

To address this, Dr Joseph Salhab, a board-certified gastroenterologist and health influencer, shared a revolutionary recipe via Instagram on 24 April.

By using just two ingredients, this homemade version turns a sugary treat into a gut-friendly snack that can be prepared within ten minutes.

Dr Salhab noted that this high-fibre fruit jelly serves as an excellent delivery method for those who dislike traditional fibre supplements.

High-fibre fruit jelly recipe

The Specialist recommends using pure fruit juice without added sugar, such as tart cherry or cranberry, to maximise benefits.

  • 75 ml pure fruit juice
  • 2 tablespoons psyllium husk powder

Method of preparation:

  • Mix both ingredients quickly and well so it does not clump.
  • Let it sit for five to 10 minutes until it thickens into a jelly.
  • Enjoy it on yoghurt, on a nut butter sandwich, or just eat it straight.

Dr Salhab described psyllium as a "miracle supplement for your gut," highlighting its ability to address multiple digestive issues.

The recipe provides approximately eight to 10 grams of fibre, helping to prevent the blood sugar crashes often associated with fruit juice.

Because psyllium contains both soluble and insoluble fibre, it forms a gel-like material that slows digestion and adds necessary bulk to the stool.

"You can’t taste it, you don’t even know it's there," the Doctor stated, emphasising the recipe's palatability.
