If sourcing nutritious, easy-to-prepare meals feels like a challenge, this recipe is the answer. On Friday, chef-turned-creator Pria Pawar shared her recipe for cucumber boats — a dish that delivers a high-protein, low-carb meal in just 20 minutes.

Each serving provides approximately 35g to 40g of protein for around 500 calories.

Ingredients

  • 3 eggs
  • ½ avocado
  • ½ cup high-protein yoghurt
  • 1 small onion
  • 3 small gherkins (jalapeños can be used as a substitute)
  • 2 cucumbers
  • Dill
  • Sriracha
  • Salt to taste
  • Pepper
  • Everything bagel seasoning

Method

Step 1: Combine three eggs, half an avocado, one onion, one spoonful of high-protein Greek yoghurt, one spoonful of mustard, a few sprigs of dill, three gherkins or jalapeños, salt and pepper to taste, and a generous drizzle of sriracha. Chop everything together until it forms a fine mixture.

Step 2: Slice two cucumbers lengthwise down the middle.

Step 3: Scoop out the seeds from each cucumber half to create a hollow channel.

Step 4: Spoon a generous amount of the egg mixture into each hollowed-out cucumber.

Step 5: Garnish with a drizzle of sriracha, everything bagel seasoning, and fresh dill. Serve immediately.

Why eggs are an excellent source of protein

According to Harvard Health, egg protein is regarded as high-quality because it contains all nine essential amino acids — nutrients the body cannot produce on its own and must therefore obtain through food.
