Ava Axelrood, an online fitness coach specialising in nutrition, gut, and hormone health, shared this high-protein, anti-inflammatory recipe via her Instagram account on April 11. To prepare this restorative meal, gather the following ingredients:

  • 4 zucchinis
  • 3 large carrots
  • Fresh ginger, grated
  • A splash of lemon juice
  • Turmeric
  • Black pepper
  • 1 pound ground turkey
  • 700 ml bone broth
  • Jasmine rice

Method

  • Thinly slice the zucchini into rounds and cut the carrots into fine slices. Grate the ginger.
  • Add the sliced vegetables and ginger to a large pot. Squeeze in lemon juice and season with turmeric and black pepper.
  • Place the pot on medium heat and cook for a few minutes, stirring occasionally, until the vegetables begin to soften.
  • In a separate pan, cook the ground turkey over medium heat, breaking it up, until browned and cooked through.
  • Pour the bone broth into the pot with the vegetables and stir to combine.
  • Add the cooked turkey and jasmine rice, mixing everything well.
  • Bring to a gentle simmer, then reduce the heat to low to medium.
  • Let it cook for about an hour, stirring occasionally, until the vegetables are tender and the flavours have come together.
