Here is a simple 5-step method to create scrumptious salmon with corn and avocado succotash. 

Ingredients for salmon with corn and avocado succotash:

  • 2tbsp olive oil
  • 1 piece skinless salmon fillet
  • 1tsp cayenne pepper
  • Salt to taste
  • Pepper to taste
  • 2tbsp fresh lime juice
  • 2½ cups fresh corn kernels
  • 6oz. green beans
  • 2 plum tomatoes
  • ½ medium red onion
  • 1 avocado
  • ¼ cup torn fresh basil leaves

5-step method for salmon with corn and avocado succotash:

  1. Heat a tablespoon of oil in a large skillet over medium-high heat. 
  2. Season the salmon with the cayenne and half a teaspoon salt, and cook until golden brown and opaque throughout, three to four minutes per side. 
  3. Meanwhile, in a large bowl, whisk together the lime juice, the remaining tablespoon oil and half a teaspoon each of salt and pepper. 
  4. Add the corn, green beans, tomatoes, and onion and toss to combine. 
  5. Fold in the avocado and basil, and serve with the salmon and lime wedges, if desired.
